Grilled Stuffed Tomato Burgers

Ingredients
- 1 onion, diced
- 1 yellow pepper, diced
- 1 garlic clove, minced
- 1 anchovy minced
- ⅛ tsp salt
- pepper
- 2 TB olive oil
- ½ cup of tomato sauce
- 1 cup brown rice cooked
- 4 tomatoes
- 4⅓ lb. hamburger patties (90% lean)
- Grated parmesan cheese
Instructions
- hallow out your tomatoes with a knife and cut the tops to use later as lids
- reserve the inside tomato flesh and dice
- heat olive oil in pan medium heat
- add onions, garlic, until translucent,
- add yellow pepper and salt, and soften veggies
- add anchovies and tomato flesh and its juices and saute another few minutes
- add tomato sauce and bring heat to low and stir occassionally about 10 minutes,
- bring the heat to simmer stir in the rice and season to taste
- Heat up the grill, oil up your grill grates and grill your hollowed out tomatoes and tomato tops on each side for about 1-2 minutes
- Meanwhile grill your burgers
- Finally, assemble your burgers
- Put stuffing into hollow grilled tomatoes, add the burger, and top it off with your grilled tomato top, sprinkle generously with fresh parmesan cheese.
