Homemade Chicken Salad with a Kick

I had a rotisserie chicken and some veggies in the fridge, so I figured why not make a chicken salad sandwich.I wanted to improve on what I don't like about most store-made chicken salads. So I used homemade mayo and less of it, lemon juice, and a touch of heat.
Ingredients
- 1 rotisserie chicken, pull off chunks of white and some of the dark meat, and chop into bit size pieces
- 1 stalk celery, cut into ¼-inch dice
- 1-2 chopped leeks
- ½-1 whole jalapeno minced
- 1 cup homemade mayonnaise
- 2 teaspoons strained freshly squeezed lemon juice
- 2 teaspoons kosher salt
- Freshly ground black pepper
Instructions
- In a mixing bowl, toss together the chicken, celery, leeks, jalapeno. Set aside.
- In a small bowl, whisk together the mayonnaise, lemon juice, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
- For sandwiches, slice some fresh bread, spread each side of bread with mayo, add chicken salad, add lettuce and tomato (add a touch of salt to the tomatoes)
