Ingredients
- ½ cup sugar
- ¼ cup unsweetened cocoa powder
- 2 tbsp. cornstarch
- ½ tsp. kosher allt
- 2.5 cups of whole milk
- 3 large egg yolks
- 3 oz. chopped bittersweet chocolate
- 2 tbsp. butter
- 1 tsp. pure vanilla extract
- whipped cream for serving
- chocolate shavings for serving
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Then, slowly add the milk, whisking to combine.
- Now turn the saucepan on medium heat and whisk until mixture comes to a boil, about five minutes.
- Next, place the egg yolks in a medium mixing bowl and beat until light and frothy.
- Slowly pour in about ½ cup hot cocoa mixture, whisking to combine and slowly pour the egg mixture back into the saucepan, whisking constantly.
- Continue to whisk and return to medium heat. Whisk until thickened to a pudding-like consistency, about 3 minutes.
- Take the saucepan off the heat and whisk in the chocolate, butter, and vanilla until smooth. If the mixture looks lumpy, strain through a fine mesh strainer.
- Finally, pour into a large bowl and place plastic wrap directly on the surface of the pudding.
- Refrigerate until chilled, 2 hours.
- Add whipped cream and chocolate shavings, optional .
