Caprese Chickpea Salad

- 1 cup of fresh mozzarella balls (use the small balls if you can so can eat each one with one bite)
- ½ - 1 cup of cherry tomatoes cut in half.
- 1-2 tbs . balsamic vinegar.
- 1-2 tbs. olive oil
- ¼ C . fresh basil (chopped)
- 1 lemon
- 1 - 15.5 oz can of chickpeas/garbanzo beans (rinsed and drained)
- salt & pepper to taste.
- Rinse and drain the chickpeas.
- Combine all the ingredients into a medium size bowl mixing well.
- Add in the balsamic vinegar and olive oil 1 tablespoon at a time (to taste).
- squeeze juice of one whole lemon
- Salt & pepper to taste
