Caprese Chickpea Salad

I made a delicious caprese salad w chickpeas, tomato, mozzarella, lemon, basil- a good summer salad!
Ingredients
  • 1 cup of fresh mozzarella balls (use the small balls if you can so can eat each one with one bite)
  • ½ - 1 cup of cherry tomatoes cut in half.
  • 1-2 tbs . balsamic vinegar.
  • 1-2 tbs. olive oil
  • ¼ C . fresh basil (chopped)
  • 1 lemon
  • 1 - 15.5 oz can of chickpeas/garbanzo beans (rinsed and drained)
  • salt & pepper to taste.
Instructions
  1. Rinse and drain the chickpeas.
  2. Combine all the ingredients into a medium size bowl mixing well.
  3. Add in the balsamic vinegar and olive oil 1 tablespoon at a time (to taste).
  4. squeeze juice of one whole lemon
  5. Salt & pepper to taste
