As a boy, I loved eating my Yia Yia’s stuffed peppers. Because I couldn’t let another 20 years go by, I decided to give stuffed zucchini and stuffed peppers a whirl. I came across Sara Moulton’s Stuffed Zucchini recipe and made sure to follow it to a “T”. Here is the recipe in five steps. Make sure you give yourself time to make this dish. This is not a quick recipe, there is a lot of chopping and zucchini carving involved, so take your time and enjoy the process. This recipe is a keeper, it tastes better than the food you find in most Greek restaurants, and would make your Yia Yia smile.
