We did some Italian Baking at the wonderful Saltbox Farm and this time we made ladyfingers. Baking in general requires work. I wish you could snap your LADY fingers 🙂 and produce a homemade cookie, but it doesn’t happen that way. There are steps involved, flour all over your kitchen counter, kneading dough, and cleanup is merciless. To be a baker requires patience. But if you stick this recipe out delicious ladyfingers you produce;  light, fluffy, and crispy on the outside. Enjoy!

Ladyfingers are delicious cookies to eat with tea or coffee, or as part of a tiramisu.
Ingredients
- 12 egg yolks
- 4.5oz granulated sugar
- 13.5 egg whites
- 7.5oz granulated sugar
- ⅓ teaspoon lemon juice
- 15oz pastry flour
Instructions
- Whip egg yolks and sugar to pale yellow ribbons
- Whip egg whites, lemon juice and sugar to medium soft peaks
- Fold yolk mixture into egg white mixture. Carefully fold in the sifted flour as not to deflate.
- Using a plain piping tip, pipe 2” long and very close together on a sheet pan
- Sift powder sugar over the top and bake at 375 degrees F until very light golden brown
