We made a homemade puttanesca sauce at the amazing Saltbox Farm, and served it on top of a bed of hand rolled Tacconi pasta. The puttanesca is a tangy, somewhat salty, delicious Italian pasta dish. Spaghetti alla puttanesca (literally "spaghetti of the whore" in Italian) is a tangy, somewhat salty Italian pasta dish invented in the mid-20th century.
Ingredients
- 1 small onion diced
- 3 cloves garlic sliced
- 5 anchovy fillets, oil packed or salt packed
- 1 tablespoon capers, soaked and chopped
- 2 tablespoons olives, pitted and chopped
- 1⁄2 cup canned plum tomatoes or sundried tomatoes soaked
- 1 pinch dried chili flakes
- 1-2 tablespoons olive oil
- 1 little squeeze of lemon
- 2 tablespoon chopped parsley
Instructions
- Sweat the onion in the olive oil over medium heat for about 5 minutes. Add the garlic, chili and anchovy and lower heat to let the anchovies gently melt. Add the tomato, caper and olives and cook slowly for another parsley. Taste for seasoning and adjust.
