What to do with left over grilled salmon? The next day I made a fresh salad with grilled small yellow potatoes, tomatoes, lettuce, artichokes, olives, croutons, and topped it off with salmon. Healthy, delicious.
Ingredients
- 1 pound of Farm Raised Salmon
- 1 bag of small yellow potatoes (about 10-15)
- garlic
- Tomatoes
- Lettuce
- Artichokes
- Croutons
- Olive Oil
- Red wine vinegar
- lemon juice
- salt/pepper
Instructions
- Grill salmon 3-4 minutes per side until translucent color goes away
- Rinse potatoes, pat dry, put on aluminum foil, add olive oil, garlic, salt pepper and wrap with aluminum foil. Grill for about 10-15 minutes on grill until your fork goes into the potatoes with little resistance
- Make your salad by tossing cold veggies with olive oil, lemon, vinegar, salt/pepper
- Make sure your potatoes and salmon are cooled off by leaving out in room temparature for about at least 30 minutes or leave in fridge overnight
- cut potatoes in half and add to salad, top with salmon and serve
