A day in the bite is my food blog, YOUR food blog, our food blog. On Sunday, Joyce a.k.a. Mama-Love made a simple, yet delicious and nutritious dish for us- I call it Mama Love’s Zucchini and Tomato Extravaganza!
This is one of those Mediterranean dishes in which you think you’re getting an appetizer but after a bite you can’t stop eating it, and suddenly becomes your main meal.

A Message from Joy “Mama Love”
I use a couple of zucchini and a yellow squash, large sweet onion, 2 med to lg tomatoes, s & p to taste, dried sweet basil, olive oil and a T grated cheese.Slice zucchini, squash, onion and tomato into thin slices. In a 9 x 12 pan (I use foil pan). Layer across – some zucchini then onion, then tomato. Repeat til pan is full. I over lap the veggies a bit. Sprinkle with salt and pepper and dried basil, drizzle olive oil over veggies and then sprinkle grated cheese.Bake uncovered @ 425 for 40 minutes to 45 minutes.
